General Mills seeks to patent method that transforms Greek yogurt waste

General Mills has applied to patent a method it claims produces prebiotic oligosacchride from Greek yogurt by-product, acid whey. The international patent application, filed by Minneapolis-based General Mills in August 2013 and published in February, details a method for the "enzyme production of soluble fiber from yogurt whey."
