Meat Market Update | Sales volume jumps as buyers refill shelves

Sales volume jumped compared to the previous holiday shortened week as meat buyers refilled shelves. The Choice-Select spread continues to run well above last year even though finished cattle are grading a higher percent Choice and Prime, which reflects something about the current demand for Choice steaks.
